Serves: 4
- 2 cooked chicken breasts, shredded
- 1/2 red apple, cored and finely chopped
- 1/2 green apple, cored and finely chopped
- 1 stalk of celery, finely chopped
- 1/4 cup sliced almonds
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 cup plus 2 tbsps. mayonnaise
- juice of one small fresh lemon
- 8 slices firm white bread
- In a large bowl, mix salt, pepper, mayonnaise, and lemon juice.
- Add in chicken, apples, celery and almonds. Mix well.
- Make into 4 sandwiches.
NOTES:
− This is also a great appetizer recipe for finger sandwiches. Simply double the recipe, cut each sandwich into four triangles, and cut the crusts off of the bread.
