Cucumber & Onions

Recipe From: Cottage Living Magazine

Serves: 4

  • 2 English cucumbers, peeled, seeded, and cubed
  • 1/2 red onion, sliced
  • 1/2 tsp. salt
  • 1/2 tsp. celery seed
  • 2 tbsps. cider vinegar
  • 2 tbsps. olive oil
  • freshly-ground black pepper
  1. Put cucumber and onion into a large mixing bowl, and toss with 1/2 tsp. salt and celery seeds. Let stand for 30 minutes.
  2. Stir in vinegar and oil. Season with additional salt and freshly-ground pepper.
  3. Refrigerate until ready to serve, up to 3 days.
