Serves: 4
- 2 English cucumbers, peeled, seeded, and cubed
- 1/2 red onion, sliced
- 1/2 tsp. salt
- 1/2 tsp. celery seed
- 2 tbsps. cider vinegar
- 2 tbsps. olive oil
- freshly-ground black pepper
- Put cucumber and onion into a large mixing bowl, and toss with 1/2 tsp. salt and celery seeds. Let stand for 30 minutes.
- Stir in vinegar and oil. Season with additional salt and freshly-ground pepper.
- Refrigerate until ready to serve, up to 3 days.
